This elegant main dish makes just as impressive an appetizer.

Directions

To make the sauce: Warm the oil in a medium saucepan over medium
heat. When hot, add the garlic and shallots and cook for 1 minute,
or until fragrant. Season with salt and black pepper, then add the
roasted red peppers, half-and-half, and milk. Whisking constantly,
bring the mixture almost to a boil, then add the cheese. Continue to
whisk until thickened. Cover to keep warm and set aside.

To make the stuffing: In a medium bowl, combine the crabmeat,
mayonnaise, bread crumbs, crab-boil seasoning, roasted red peppers,
and salt and pepper to taste. Mix carefully and set aside.

Preheat the oven to 350°F.

To make the shrimp: Coat a baking sheet with cooking spray. Peel and
devein the shrimp, cutting along the back of each shrimp to make a
flat surface for the stuffing. Arrange the shrimp on the prepared
baking sheet about 2" or 3" apart. On each shrimp, place about 1
tablespoon of stuffing, then drizzle with oil and dust with paprika.
5.
Bake for about 20 minutes, or until the shrimp turn pink and opaque.
Transfer to a serving plate, drizzle with sauce, top with fresh
parsley and red peppers, and serve.
