This super-easy salsa is fresh tasting, low in fat, high in fiber, and protein rich. It tastes like sun-ripened tomatoes, even in the winter.

Ingredients

1 can (15 ounces) black beans, drained
3 medium tomatoes, diced
2 tablespoons frozen orange juice concentrate
1/2 cup chopped cilantro
salt
 

Directions

1.
In a medium bowl, mix the beans, tomatoes, orange juice, and cilantro. Add salt to taste. Let the mixture stand for 30 minutes to allow the flavors to combine.
